 We are collecting supplies for the classroom and office of Mi Escuelita, the preschool where we teach art enrichment classes.

Texas Chili

Authentic Texas Chili doesn’t have tomatoes nor beans. That’s the way my mother, who was from Corpus Christi, made it and the way her mother made it.

 1 small onion, chopped  2 T. oil
 2 jalapenos, seeded & finely chopped  2 T. chili powder
 2 lbs. eye of round roast, finely cubed (or 2 lbs. stew meat)  2 T. cumin
3 cloves garlic (or to taste), minced  
  1. Heat oil over medium heat.
  2. Brown meat.
  3. Add onion, continue browning.
  4. Add jalapenos, chili powder, cumin, garlic & toast for 1 minute.
  5. Bring to boil on high heat.
  6. Turn heat to low and simmer for 20 minutes.
  7. Serve with cooked white or Spanish rice or corn ships and cheese for a chili pie!

Mi Escuelita

For nearly 40 years, Mi Escuelita has given children an excellent preschool education to thousands of low-income families of children in its 6 locations in the Dallas area. More than 85% of their graduates transition directly to English-speaking classrooms. On the 3rd Wednesday of the month beginning in October, volunteers from the ICC will go to the Cockrell Hill location to read books and teach a craft. Emphasis this year will be on art awareness and feature these 6 famous artists: Pablo Picasso, Joan MirĂ³, Frida Kahlo, Claude Monet, Georgia O’Keefe, and Klaas Verplanke.

More volunteers are needed for this rewarding opportunity. All reading and teaching is in English.
