What's Cooking

Penne with Cashew Sauce and Marinated Mushrooms

Our very own Ginny demonstrated this recipe via zoom for our members on September 22nd. Look out for the October "What's Cooking" invitation!

Ingredients for the Marinated Mushrooms:

2 cups of sliced white mushrooms, 1/4 cup soy sauce
1/4 cup extra virgin olive oil
2 Tbs of finally chopped green onions

Ingredients for the Sauce:

1 cup of raw cashew nuts unsalted
1 cup coconut water
1Tbs fresh squeezed lemon juice
1/4 tsp crushed and finely chopped garlic 1 Tbs fresh Italian parsley

1 tsp salt
1 Lb gluten free penne or traditional penne


1. Raw Cashew nuts will need to be soaked in water overnight or at least 30 minutes in hot water prior to the class.

2. A food processor or a blender is also needed.

How to Prepare:

Marinate the Mushrooms

Wash, slice them thin and drain.

Mix the soy sauce and olive oil, add the mushrooms and let it marinate for about 15 minutes before serving.


Drain the cashew nuts and dispose the water.
Put the cashews in a food processor or blender with the coconut water and liquify the mixture until a smooth texture. Add the lemon or juice, garlic, parsley and salt and process it again until a smooth and creamy texture.


Cook the pasta al dente and drain it.

How To Serve

Put the pasta on a dish and cover it with the creamy sauce. Add the marinated mushrooms (without the soy sauce mixture) and garnish it with the finely chopped green onions.
*If you like the soy mixture, you can pour a little bit of it on the dish.

Mi Escuelita

For nearly 40 years, Mi Escuelita has given children an excellent preschool education to thousands of low-income families of children in its 6 locations in the Dallas area. More than 85% of their graduates transition directly to English-speaking classrooms. On the 3rd Wednesday of the month beginning in October, volunteers from the ICC will go to the Cockrell Hill location to read books and teach a craft. Emphasis this year will be on art awareness and feature these 6 famous artists: Pablo Picasso, Joan MirĂ³, Frida Kahlo, Claude Monet, Georgia O’Keefe, and Klaas Verplanke.

More volunteers are needed for this rewarding opportunity. All reading and teaching is in English.
